Happy Cinco De Mayo

 Pineapple Salsa

Two overflowing cups pineapple, diced

One small red or white onion, chopped

One large handful of cilantro, stems removed, chopped leaves

One jalepeno or Serrano chile pepper, finely chopped, keeps seeds if you want it hot!

Juice of one or two limes

One tsp cayenne pepper for hotness level

Salt to taste

 Combine all ingredients! Use with your favorite corn chip. This salsa is

fresh, and good! This salsa can also top your favorite fish or chicken dish as well.
